Located in the shadows of one of Japan’s largest and majestic castles, Himeji-jo, come enjoy beautiful food and beautiful views from the comfort of my warm kitchen. Designated as a UNESCO World Heritage site in 1993, Himeji Castle is also a national treasure and offers amazing views year round, but especially during the cherry blossom season in spring.
We change the menu with the season, offering only the highest quality ingredients to make the best Japanese food available. Soup stock is one of the key ingredients to making wonderful Japanese food and I will show you how to make it just right. In Japan we use a thick edible seaweed we call Kombu, and dried bonito flakes as the base for our stock. I think you will find it very interesting how to make this simple yet complex base for our dishes. .
I will introduce you not only to Japanese cooking, but also the unique utensils and seasonings we use to make it. I also try to introduce you to some Japanese culture and customs along the way to enhance your experience. Best of all, you get to enjoy what you make and take in the beauty of the castle and grounds. Nothing tastes better than that which you have made with your own hands. I will also provide you the recipe so you can try making these dishes in the comfort of your own homes. I encourage you to invite your family and friends and enjoy healthy and delicious Japanese food and spread the word. .
